Mom's Meatloaf

I don’t about you, but I do not have the time or energy to cook everything from scratch. Then it came to me – I don’t have to!
In brief – I need to add more fiber – more fruit – more veggies into our diet without driving me – she who does all the shopping, cooking and prep- insane. Then it hit me – why don’t I add more of the good stuff into what we are already eating & enjoying.
Here is my first concoction! A healthier version of my mother’s favorite Meatloaf Recipe.
MOM'S MEATLOAF - UPDATED
Yield: 4 servings
Prep Time: 10-15 minutes
Cook Time: 50-60 minutes
INGREDIENTS:
1 Tablespoon Organic Coconut Oil or Extra Virgin Olive Oil
1 cup Onion, finely chopped
2 cloves Garlic, minced
1 cup Zucchini, finely chopped
1-1/2 lb lean Ground Beef
1 cup Corn Flakes, crushed (can substitute with Bread Crumbs)
2 teaspoons Salt
1 teaspoon freshly ground Black Pepper
2 Tablespoons Flax Seeds
2 large Eggs, slightly beaten
1/4 cup Salsa + another 1/2 cup Salsa and 2 Tablespoons Wheat Germ for topping

DIRECTIONS:
- Preheat oven to 350 degrees Fahrenheit.
- Add olive oil to large heavy skillet and heat on medium setting for 2 minutes. Add the onion, garlic and zucchini and saute for 4-5 minutes; until onion becomes translucent.
- In a large bowl, combine ground beef, corn flakes, salt, pepper, flax seeds, eggs and 1/4 cup salsa.
- Mix with hands until ingredients are well incorporated. Form into a loaf and place in a lightly greased loaf pan.
- Bake for 45 minutes.
- Add remaining salsa and wheat germ and bake for additional 10-15 minutes.
- Remove from oven and let rest for 5 minutes.
- Transfer to serving platter and cut into four slices. Serve immediately.
